American countries, not just for its participation in the
agricultural systems, but for its contribution to local diets.
Yucca is the feeding base for more than half a billion people in
America, Asia and Africa.
Among its advantages is the
high level of starch and the ability to be grown in different
types of ecosystems.It has a long shape, brown log-looking skin
and white pulp.
Although there are thousands
of varieties, the most consumed are the Manihot. Yucca is also
known as mandioca, maniot, manioc, parí, quivá, cui, cassava,
among others.
Nutritional
information
Yucca is rich in fiber and
carbohydrates (85%) and poor in fat and protein. It has
digestive properties and its a moderate supplier of B complex
vitamins, Potassium, Magnesium, Calcium, Phosphorus, Iron and
Vitamin C.
It is an excellent
source of ascorbic acid covering 40% of the amount required
for an average grown adult. |
