General Information
It was grown extensively by the
Central American Mayan and Aztec civilizations. Nowadays it is a
nutritive supplement of wide importance; since not just the
vegetable itself but the creeper and roots are also used for food
in many regions of the Americas.
Chayote is a popular vegetable widely
distributed in subtropical regions with a precipitation of more than 2,100 mm
(82,7 in). Since it is easy to grow, many rural families have more than one plant.
This vegetable has soft meat and one soft seed.
Nutritional
information
Chayote has high amounts of fiber, low in
calories and has NO cholesterol. A very longed part of the ripe
vegetables is the seed, which has a walnut resembling flavor and
fine texture.
Although it has a smaller contents of vitamins,
fibers and proteins, chayote and specially the seeds give a high
supply of carbohydrates and aminoacids. Other minerals supplied
are calcium, iron, phosphorus and vitamins from A, B and C groups.
